Recovery Day

Here is one of our favorite Paleo recipes:

2 lbs. Italian Sausage
1 onion, chopped
8 oz. sliced mushrooms
12 oz can tomato paste
2 cans fire roasted diced tomatoes
32 oz. chicken broth
Oregano, basil, parsley to taste
Bag of fresh spinach

Brown the sausage, then add chopped onions and mushrooms. After the onions are clear, add tomato paste and diced tomatoes. Add the broth and herbs. Add spinach about 10-20 minutes before you are ready to eat! Sometimes I simmer the soup for awhile but it is good either way! Hope you enjoy it!!
